Coarsely chop the tomato. Trim the stems from the snow peas, removing the strings from one side. Cut the lime into wedges. Crush or finely chop 2 garlic cloves. Pick the coriander leaves, discarding the stems.
Step 2 — Start curry
Heat 2 tsp vegetable oil in a medium deep frypan over medium-high heat. Cook the tomato and garlic, stirring, for 1-2 mins until softened. Add the red galangal seasoning and cook, stirring, for 30 secs or until fragrant.
Step 3 — Finish curry
Stir the coconut milk and 60ml (¼ cup) water into the tomato mixture and bring to a simmer. Cook for 1-2 mins until starting to thicken. Stir in the prawns and snow peas and cook for a further 3-4 mins until the prawns are cooked through. Remove the pan from the heat. Season with salt and pepper.
Step 4 — Warm rice and serve up
Meanwhile, massage the packet of rice to loosen and tear a 2cm opening for the steam to escape. Heat in the microwave for 90 secs or until warmed through. Divide the rice and curry among bowls. Scatter with the coriander and serve with the lime wedges. Enjoy!
