Ingredients

  • 25g maple syrup
  • 300g basa fish fillets
  • 1pcs pak choy
  • 100g snow peas
  • 1pcs spring onion
  • 150g egg noodles
  • 40g Japanese dressing
  • 15ml soy sauce
  • 1pinch pinch of chilli flakes (optional)

Method

  1. Step 1 — Grill fish
    Bring a medium saucepan of water to the boil for the noodles. Preheat the grill to high. Line an oven tray with foil. Lightly grease the foil. Combine the maple syrup and 1 tbs soy sauce in a bowl. Put the fish on the lined tray, then pour over the maple mixture. Grill for 8-9 mins until the fish is cooked through.
  2. Step 2 — Cook noodles and greens
    Meanwhile, thickly slice the pak choy. Trim the stems from the snow peas, removing the strings from one side. Thinly slice the spring onion. Cook the noodles, pak choy and snow peas in the pan of boiling water for 2 mins or until the noodles and veggies are tender. Drain, then rinse under hot water to prevent the noodles from sticking.
  3. Step 3 — Serve up
    Break the fish into large pieces. Divide the noodles and veggies among bowls and drizzle with the Japanese dressing. Top with the fish and drizzle with any resting juices, then scatter with the spring onion and a pinch of chilli flakes, if using. Enjoy!
