Ingredients

  • 1pcs lime
  • 1pcs ginger
  • 1clove garlic
  • 1pcs capsicum
  • 1pcs cos lettuce
  • 300g lean pork mince
  • 50g Szechuan stir-fry sauce
  • 250g microwave brown rice and quinoa
  • 60g satay sauce
  • 20g roasted peanuts
  • 1bunch mint
  • 1bunch coriander
  • 1pcs neutral-flavoured oil
  • 5ml soy sauce
  • 5ml honey

Method

  1. Step 1 — Prep ingredients
    Finely grate the zest of half the lime, then cut the whole lime into wedges. Finely grate half the ginger*. Crush or finely chop the garlic. Thinly slice the capsicum. Trim the lettuce, then separate the leaves.
  2. Step 2 — Cook pork mixture
    Heat a drizzle of oil in a medium deep frypan over high heat. Cook the capsicum and pork mince, breaking up the lumps with a spoon, for 4-5 mins until browned. Stir in the ginger, garlic, stir-fry sauce and 60ml (¼ cup) water. Remove from the heat.
  3. Step 3 — Add rice blend
    Meanwhile, massage the packet of rice blend to loosen and tear a 2cm opening for the steam to escape. Heat in the microwave for 90 secs or until heated through. Add the rice blend to the pork mixture and stir to combine. Taste, then season with salt and pepper.
  4. Step 4 — Get ready to serve
    Combine the satay sauce, lime zest, peanuts, 1 tsp soy sauce and 1 tsp honey in a bowl and season with pepper. Divide the pork and rice mixture among the lettuce cups. Drizzle with the peanut sauce. Tear the mint and coriander leaves over the san choy bow, discarding the stems. Serve with the lime wedges.
