Ingredients

  • 1pcs capsicum
  • 1bunch coriander
  • 225g pineapple pieces
  • 60g char siu sauce
  • 10g cornflour
  • 300g lean pork mince
  • 250g microwave jasmine rice
  • 15ml tomato sauce
  • 10ml soy sauce
  • 10ml white vinegar
  • 10ml vegetable oil
  • 1pcs chilli flakes (optional)

Method

  1. Step 1 — Make sweet and sour sauce
    Cut the capsicum into 2cm chunks. Pick the coriander leaves, discarding the stems. Drain the pineapple pieces, reserving 1 tbs pineapple juice*. Combine the pineapple juice, char siu sauce, cornflour, 1 tbs tomato sauce, 2 tsp soy sauce, 2 tsp white vinegar and 60ml (¼ cup) water in a bowl and season with pepper.
  2. Step 2 — Cook pork mince
    Heat a drizzle of vegetable oil in a medium frypan over high heat. Cook the pork mince and capsicum, breaking up the lumps with a spoon, for 3-4 mins until browned. Add the sweet and sour sauce and pineapple pieces and cook, stirring, for 30 secs-1 min until the sauce is slightly reduced and glossy. Remove from the heat.
  3. Step 3 — Microwave rice
    Massage the packet of rice to loosen and tear a 2cm opening for the steam to escape. Heat in the microwave for 90 secs or until warmed through.
  4. Step 4 — Serve up
    Divide the rice and sweet and sour pork among bowls. Scatter with the coriander and a pinch of chilli flakes, if using. Enjoy!
