Ingredients

  • 2pcs milk buns
  • 1pcs Lebanese cucumber
  • 20g miso paste
  • 50g aioli mayonnaise
  • 300g premium beef patties
  • 75g tonkatsu sauce
  • 200g slaw mix
  • 10ml boiling water
  • 5ml vegetable oil

Method

  1. Step 1 — Prep ingredients
    Preheat the grill to high. Cut the buns in half. Peel the cucumber into ribbons with a vegetable peeler (see Kitchen 101). Combine the miso and 2 tsp boiling water in a large bowl and whisk until smooth. Add the aioli and stir to combine.
  2. Step 2 — Cook patties
    Heat a drizzle of vegetable oil in a medium frypan over medium-high heat. Add the beef patties to the pan, then cover and cook for 4 mins each side or until cooked through. Drain the oil from the pan. Add the tonkatsu sauce and cook, turning, until the patties are well coated. Remove the pan from the heat.
  3. Step 3 — Toast buns
    Meanwhile, put the buns on an oven tray, cut-side up, and grill for 1-2 mins until lightly toasted.
  4. Step 4 — Toss slaw
    Transfer half the miso aioli to a small bowl and reserve. Add the slaw mix to the remaining miso aioli and toss to combine.
  5. Step 5 — Serve up
    Spread the buns with the reserved miso aioli. Layer the bases with the beef patties and drizzle with any pan juices. Top with some slaw and some cucumber, then sandwich with the bun tops. Add the remaining cucumber to the remaining slaw and toss to combine. Divide the burgers and cucumber slaw among plates and enjoy!
