Ingredients

  • 2pcs zucchini
  • 120g cream cheese
  • 1pcs diced bacon
  • 10g Aussie barbecue seasoning
  • 40g panko breadcrumbs
  • 100g mixed salad leaves
  • 1pcs egg white
  • 19ml olive oil
  • 10ml balsamic vinegar

Method

  1. Step 1 — Prep zucchini
    Preheat the air fryer to 200C (see Don't have an air fryer?). Halve the zucchini lengthwise, then scrape out the flesh using a teaspoon, leaving a 5mm-thick shell. Squeeze the zucchini flesh with your hands to remove any excess liquid, then put in a large bowl.
  2. Step 2 — Stuff zucchini
    Add the cream cheese, bacon, half the barbecue seasoning* and 1 egg white to the zucchini flesh. Season with salt and pepper and stir to combine. Spoon the cream cheese mixture into the zucchini shells.
  3. Step 3 — Air-fry zucchini boats
    Put the breadcrumbs and 3 tsp olive oil in a bowl and massage with your fingers until combined. Scatter the crumbs over the stuffed zucchini. Put the zucchini boats in the air-fryer basket. Air-fry for 12 mins or until the zucchini is tender and the breadcrumbs are golden.
  4. Step 4 — Dress salad leaves
    Meanwhile, combine 2 tsp olive oil and 2 tsp balsamic vinegar in a large bowl and season with salt and pepper. Add the salad leaves and toss to coat.
  5. Step 5 — Serve up
    Divide the stuffed zucchini boats among plates and serve with the salad leaves. Enjoy!
  6. Step 6 — Don't have an air fryer?
    No worries, you can cook the zucchini boats in the oven. Preheat the oven to 180C, fan-forced. Put the zucchini boats on an oven tray lined with baking paper. Bake for 25 mins or until the zucchini is tender and the breadcrumbs are golden.
