Ingredients

  • 2pcs potato
  • 1pcs carrot
  • 10g Aussie barbecue seasoning
  • 300g chicken tenderloins
  • 150g peas
  • 50g yoghurt ranch dressing
  • 30ml olive oil
  • 10g butter

Method

  1. Step 1 — Air-fry veggie chips
    Preheat the air fryer to 200C (see Don't have an air fryer?). Cut the unpeeled potatoes and carrot into 1cm-thick chips. Put in a bowl, add 1 tbs olive oil, season with salt and pepper and toss to coat. Put the chips in the air-fryer basket and air-fry, shaking the basket halfway, for 18-20 mins until golden and tender. Remove and keep warm.
  2. Step 2 — Marinate chicken
    Meanwhile, combine the barbecue seasoning and 1 tbs olive oil in a large bowl and season with salt and pepper. Add the chicken and turn to coat.
  3. Step 3 — Air-fry chicken
    Put the chicken in the air-fryer basket, in batches. Air-fry the chicken for 10 mins or until browned and cooked through.
  4. Step 4 — Boil peas
    While the chicken is cooking, bring a small saucepan of water to the boil. Add the peas and cook for 2 mins or until tender. Drain, then return to the pan. Add 10g butter and coarsely mash with a potato masher.
  5. Step 5 — Warm chips and serve up
    Remove the chicken from the air-fryer basket. Add the veggie chips to the basket and air-fry for 2-3 mins until hot. Divide the chicken, smashed peas and veggie chips among plates, serve with the ranch dressing and enjoy!
  6. Step 6 — Don't have an air fryer?
    No problem! Roast the veggie chips in the oven and pan-fry the chicken instead. If you're short on time, simply pan-fry the chicken while the veggies are air-frying.
