Preheat the air fryer to 200C (see Don't have an air fryer?). Rinse the rice until the water runs clear. Put in a small saucepan with 250ml (1 cup) water, cover and bring to a simmer over medium heat. Reduce the heat to low and cook for 12 mins or until tender and the water is absorbed. Turn off the heat and stand, covered, for at least 5 mins. Fluff the rice with a fork.
Step 2 — Air-fry chicken
Meanwhile, combine the Balinese seasoning and 1 tbs vegetable oil in a large bowl and season with salt and pepper. Add the chicken wings and toss to coat. Put the chicken wings in the air-fryer basket, in batches if necessary. Air-fry the chicken, turning halfway, for 15 mins or until browned and cooked through.
Step 3 — Prep pickles and mayo
While the chicken is cooking, halve the carrot and thinly slice on an angle. Thinly slice the celery on an angle. Combine 2 tsp white vinegar and 1 tsp sugar in a large heatproof bowl. Add the veggies and toss to combine. Combine 1 tbs mayonnaise and 1 tsp water in a bowl and season with salt and pepper.
Step 4 — Make chilli oil
Heat 1 tbs vegetable oil in a small saucepan over medium heat. Cook 1 tsp chilli flakes, stirring, for 1-2 mins until fragrant. Remove the pan from the heat. Pour the chilli oil over the veggie mixture (take extra care as the oil can spit). Season with salt and pepper. Set aside to infuse until needed.
Step 5 — Serve up
Coarsely chop the peanuts. Put the sweet chilli sauce in a large bowl, add the chicken wings and toss to coat. Season with salt and pepper. Divide the chicken, rice and pickles among plates and drizzle any remaining pickling liquid over the rice. Scatter over the peanuts, drizzle with the mayo and enjoy!
Step 6 — Don't have an air fryer?
No worries, you can cook the chicken in the oven. Preheat the oven to 220C, fan-forced. Put the chicken wings on a lined tray and bake for 25 mins or until browned and cooked through.
