Preheat the oven to 220C, fan-forced. Thinly slice the cabbage with a sharp knife or mandoline. Combine 2 tsp white vinegar and 1 tsp honey in a large bowl. Add the cabbage and toss to coat. Cut the spring onion into 8cm lengths, then thinly slice lengthwise. Put in a bowl of iced water to curl (see cooking tip).
Step 2 — Brown beef mince
Bring a small saucepan of water to the boil for the edamame. Heat 1 tsp oil in a medium frypan over high heat. Cook the beef mince, breaking up the lumps with a spoon, for 3-4 mins until browned. Add the umami seasoning and cook, stirring, for 30 secs or until fragrant.
Step 3 — Simmer beef mixture
Stir the barbecue sauce, 60ml (¼ cup) water and 1 tsp soy sauce into the beef mince and bring to a simmer. Cook, stirring, for 1-2 mins until slightly reduced. Taste, then season with pepper.
Step 4 — Make edamame guac
Add the edamame to the pan of boiling water, return to the boil and cook for 2 mins. Drain, then rinse under cold water. Put the edamame in a bowl and mash with a potato masher or fork until crushed. Stir in the guacamole.
Step 5 — Toast corn chips
While the edamame are cooking, line an oven tray with baking paper. Put the corn chips on the tray and bake for 3 mins or until lightly toasted.
Step 6 — Make peanut drizzle
Finely chop the peanuts. Combine the peanuts, ½ tsp chilli flakes* (use more or less to taste), 1 tsp white vinegar, 1 tsp soy sauce, 1 tsp water and 1 tsp honey in a bowl and season with pepper. Top the corn chips with the beef mixture, cabbage slaw, edamame guac, peanut-chilli mixture and spring onion. Serve the beef nachos at the table.
