Thinly slice the broccoli stem, then cut the head into small florets. Thinly slice the capsicum. Halve the carrot lengthwise and thinly slice on an angle. Finely grate the ginger. Crush or finely chop the garlic. Coarsely chop the peanuts.
Step 2 — Make sauce
Bring a medium saucepan of water to the boil for the noodles. Combine the oyster sauce, half the teriyaki sauce*, ½ tsp white vinegar and 1 tbs water in a bowl.
Step 3 — Brown beef mince
Heat 2 tsp oil in a large deep frypan over high heat. Add the beef mince and season with pepper. Cook, breaking up any lumps with a spoon, for 3-4 mins until browned. Remove from the pan.
Step 4 — Stir-fry vegetables
Heat 1 tbs oil in the same pan over high heat until hot. Stir-fry the broccoli for 2 mins. Add the capsicum, carrot, ginger and garlic and stir-fry for a further 3-4 mins until starting to soften.
Step 5 — Cook noodles
Meanwhile, cook the noodles in the pan of boiling water for 2 mins or until tender. Drain, then rinse under hot water to prevent the noodles from sticking.
Step 6 — Get ready to serve
Add the mince and teriyaki sauce mixture to the vegetables and cook, stirring, for 1 min or until the vegetables are tender. Add the noodles and toss to combine. Divide the noodle stir-fry among bowls. Scatter with the peanuts to serve.
