Bring a large saucepan of salted water to the boil for the pasta. Finely chop the carrot. Pick the parsley leaves and finely chop the stems.
Step 2 — Brown beef mince
Heat 2 tsp olive oil in a medium deep frypan over medium-high heat. Cook the carrot and parsley stems, stirring, for 3-4 mins until starting to soften. Increase the heat to high, add the beef mince and cook, breaking up the lumps with a spoon, for 3-4 mins until browned.
Step 3 — Simmer mince
Add the barbecue seasoning, tomatoes, 3 tsp barbecue sauce and 125ml (½ cup) water to the mince mixture. Bring to the boil, then reduce the heat to medium and cook, stirring occasionally, for 8 mins or until slightly thickened. Remove the pan from the heat. Taste, then season with salt and pepper.
Step 4 — Cook pasta
While the sauce is cooking, add the pasta to the pan of boiling water and cook, stirring to separate the strands, for 3-4 mins until al dente. Drain, then return the pasta to the pan. Drizzle with 1 tsp olive oil, season with salt and pepper and toss to coat.
Step 5 — Serve up
Divide the pasta and beef bolognese among bowls. Scatter over the parsley leaves and enjoy!
Step 6 — Make it cheesy
Cheese and pasta are a match made in heaven. If you have any on hand, grate some cheddar or parmesan over the fettuccine bolognese before serving.
