Preheat the oven to 220C, fan-forced (see Make it yours). Line a large oven tray with baking paper. Thinly slice the onion. Finely chop the tomato. Crush or finely chop the garlic.
Step 2 — Cook beef filling
Heat 2 tsp olive oil in a medium frypan over medium heat. Cook the onion, stirring, for 3-4 mins until softened. Increase the heat to high, add the beef mince and cook, breaking up the lumps with a spoon, for 3-4 mins until browned. Add the garlic and kofta seasoning and cook, stirring, for 30 secs or until fragrant. Remove the pan from the heat.
Step 3 — Bake gozleme
Divide the beef filling and half the spinach among the tortillas. Fold the tortillas in half to enclose the filling, then press together firmly. Put on the lined tray and lightly spray or brush with olive oil. Bake for 10 mins or until golden and crisp.
Step 4 — Dress spinach
Meanwhile, combine 1 tsp olive oil and ½ tsp white wine vinegar in a large bowl and season with salt and pepper. Add the remaining spinach and toss to coat.
Step 5 — Serve up
Combine 2 tbs mayonnaise and 2 tsp water in a bowl and season with salt and pepper. Divide the gozleme and dressed spinach among plates, scatter over the tomato and drizzle with the mayo. Enjoy!
Step 6 — Make it yours
Don't want to turn the oven on? Simply pan-fry the tortillas, one at a time, until golden. Fill with the spinach, beef filling and tomato, then drizzle with the mayo.
