If adding the boiled eggs, bring a small saucepan of water to the boil. Shred the carrot using a julienne peeler or coarsely grate with a box grater. Combine 2 tsp white vinegar and a pinch of salt in a bowl. Add the carrot and toss to coat. Set aside to pickle, tossing occasionally, until needed.
Step 2 — Cook eggs and brown mince
Cook 2 eggs in the pan of boiling water for 6 mins for soft-boiled, or 8 mins for hard-boiled. Drain, then cool in cold water. Meanwhile, bring a medium saucepan of water to the boil for the noodles and edamame. Heat 2 tsp vegetable oil in a medium frypan over high heat. Cook the beef mince, breaking up the lumps with a spoon, for 3-4 mins until browned.
Step 3 — Simmer mince
Add the Chinese barbecue seasoning, 2 tsp tomato sauce, 1½ tbs soy sauce and 80ml (⅓ cup) water to the mince and bring to a simmer. Reduce the heat to medium-high and cook, stirring occasionally, for 3-4 mins until slightly thickened. Remove the pan from the heat. Taste, then season with pepper.
Step 4 — Cook noodles
While the mince is simmering, cook the noodles in the medium pan of boiling water for 5 mins. Add the edamame, return to the boil and cook for a further 2 mins or until the noodles and edamame are tender. Drain, then rinse under hot water to prevent the noodles from sticking.
Step 5 — Serve up
Peel and halve the eggs. Divide the noodles and edamame, pickled carrot, mince mixture and egg among bowls. Scatter with the sesame seeds and enjoy!
Step 6 — Make it yours
If you have some radish on hand, thinly slice and add to the noodle bowls before serving; it's nutritious, delicious and oh-so pretty!
