Ingredients

  • 125g brown rice
  • 1pcs carrot
  • 1pcs capsicum
  • 1pcs spring onion
  • 2clov garlic
  • 10g Cajun seasoning
  • 2pcs beef rump steaks
  • 15ml olive oil
  • 30ml mayonnaise

Method

  1. Step 1 — Cook rice
    Fill a medium saucepan three-quarters full with water and bring to the boil. Add the rice and cook for 25-27 mins until tender. Drain.
  2. Step 2 — Prep and cook veggies
    While the rice is cooking, quarter the carrot lengthwise and thinly slice. Finely chop the capsicum. Thinly slice the spring onion. Crush or finely chop the garlic. Heat 2 tsp olive oil in a medium deep frypan over medium heat. Cook the carrot and capsicum, stirring occasionally, for 10 mins or until the carrot is tender.
  3. Step 3 — Cook steaks
    Meanwhile, combine 2 tsp Cajun seasoning (see Kitchen notes) and 2 tsp olive oil in a large bowl and season with salt and pepper. Add the steaks and turn to coat. Heat a medium frypan over high heat until hot (see Kitchen notes). Reduce heat to medium-high and cook steaks for 2-3 mins each side for medium-rare, or until cooked to your liking. Remove from pan and rest for 3 mins.
  4. Step 4 — Finish veggie rice
    Add the garlic and remaining Cajun seasoning to the veggies and cook, stirring, for 30 secs or until fragrant. Stir in the rice and cook for 1 min or until combined. Remove the pan from the heat. Taste, then season with salt and pepper.
  5. Step 5 — Serve up
    Slice the steaks. Divide the veggie rice and steak among bowls, drizzle with the mayonnaise and scatter over the spring onion. Enjoy!
  6. Step 6 — Kitchen notes
    If you don't like too much heat, reduce the Cajun seasoning to taste or simply season the steaks with salt and pepper instead. ~ It's important to have the pan very hot before adding the beef, otherwise it may stew slightly and become tough.
