Preheat the barbecue to high (see Don't have a barbie?). Thinly slice the onion into rings. Cut the bread rolls in half. Combine half the masala seasoning and 2 tsp olive oil in a large bowl and season with salt and pepper. Add the chicken and turn to coat.
Step 2 — Make toppings
Combine the remaining masala seasoning and 2 tbs mayonnaise in a bowl and season with salt and pepper. Combine 2 tsp olive oil and 1 tsp white vinegar in a large bowl and season with salt and pepper. Add the spinach and toss to coat.
Step 3 — Barbecue chicken
Cook the chicken on the barbecue for 6 mins each side or until browned and cooked through. Transfer to a bowl, add the mango chutney and turn to coat.
Step 4 — Barbecue onion and rolls
Meanwhile, drizzle the onion and cut sides of the rolls with 2 tsp olive oil. Cook the onion on the barbecue, turning, for 3-4 mins until softened and lightly charred. Cook the rolls, cut-side down, on the barbecue for 2-3 mins until toasted. Remove from the barbecue.
Step 5 — Serve up
Spread the roll bases with the masala mayo. Layer with the spinach, chicken and onion, then sandwich with the tops. Divide the burgers and any remaining spinach among plates and enjoy!

No worries, you can cook the chicken, onion and rolls in a chargrill pan or frypan instead – just adjust the cook times!
