Preheat the barbecue to medium-high (see Cooking tip). Rinse the rice until the water runs clear. Put in a small saucepan with 250ml (1 cup) water, cover and bring to a simmer over medium heat. Reduce the heat to low and cook for 12 mins or until tender and the water is absorbed. Turn off the heat and stand, covered, for at least 5 mins. Fluff the rice with a fork.
Step 2 — Prep ingredients
Meanwhile, drain the pineapple pieces and reserve the juice. To make the dressing, combine 1 tsp pineapple juice, 2 tsp olive oil and ¼ tsp white wine vinegar in a large bowl and season with salt and pepper. Combine the sweet chilli sauce, pineapple, remaining pineapple juice, 2 tsp soy sauce and 2 tsp sugar in a small saucepan.
Step 3 — Barbecue chicken
Add the chicken to the pineapple mixture in the pan and turn to coat. Transfer the chicken to a plate, drizzle with 2 tsp olive oil and season with salt and pepper. Reserve the pineapple mixture in the pan. Cook the chicken on the barbecue for 5-6 mins each side until cooked through. Remove from the barbecue.
Step 4 — Boil pineapple mixture
Add 1 tbs water to the reserved pineapple mixture and bring to the boil over high heat. Boil, stirring regularly, for 2 mins or until slightly thickened. Remove from the heat, then season with salt and pepper. Thinly slice the chicken, then add to the pineapple mixture and turn to coat.
Step 5 — Make salad and serve up
Finely chop the peanuts. Shred the carrot using a julienne peeler or coarsely grate with a box grater. Add the carrot and salad leaves to the dressing and toss to combine. Divide the chicken and pineapple mixture, rice (see Make it yours) and salad among plates. Scatter with the peanuts and enjoy!
