Preheat the oven to 220C, fan-forced. Line an oven tray with baking paper. Cut the potato into 2cm-thick chips. Thickly slice the onion into rings. Put the potato and onion on the lined tray, keeping them separate. Drizzle with 2 tsp olive oil and season with salt and pepper. Roast for 22-25 mins until golden and tender.
Step 2 — Prep ingredients
Meanwhile, trim the lettuce, then separate the leaves. Thinly slice the tomato (see Make it yours). Put the Caribbean seasoning and 2 tsp olive oil in a large bowl and season with salt and pepper. Add the fish and turn to coat.
Step 3 — Cook bacon and fish
Heat a medium frypan over medium-high heat. Add the bacon and cook, stirring, for 2-3 mins until starting to crisp, then push to the side of the pan. Reduce the heat to medium, add the fish and cook for 3½-4 mins each side until the fish is browned and cooked through and the bacon is crisp.
Step 4 — Make salad and mayo
Combine 2 tsp olive oil and 1 tsp red wine vinegar in a large bowl and season with salt and pepper. Add the lettuce and tomato and toss to combine. To make the thousand island mayo, combine 2 tbs tomato sauce, 2 tbs mayonnaise and 1 tsp worcestershire sauce* in a separate bowl and season with salt and pepper.
Step 5 — Serve up
Turn the oven to grill mode and preheat to high. Cut the bread rolls in half. Put the rolls, cut-side up, on an oven tray and grill for 1-2 mins until lightly toasted. Spread the bases with some of the thousand island mayo. Layer with the fish, bacon, salad and onion, then sandwich with the tops. Serve with the chips and remaining mayo. Enjoy!
