Ingredients

  • 1pcs onion
  • 2clov garlic
  • 300g lean beef mince
  • 50g tomato paste
  • 400g diced tomatoes
  • 20ml worcestershire sauce
  • 200g penne pasta
  • 10g Italian seasoning
  • 50g baby spinach leaves
  • 5ml olive oil

Method

  1. Step 1 — Soften onion
Finely chop the onion. Crush or finely chop 2 garlic cloves. Heat 1 tsp olive oil in a medium deep frypan over medium heat. Cook the onion and garlic, stirring, for 5 mins or until the onion is soft.
  2. Step 2 — Brown beef mince
Increase the heat to high. Add the beef mince to the onion mixture and cook, breaking up the lumps with a spoon, for 3-4 mins until browned. Add half the tomato paste* and cook, stirring, for 1 min. Stir in the tomatoes, worcestershire sauce and 625ml (2½ cups) water and bring to the boil.
  3. Step 3 — Add pasta
Add the pasta and Italian seasoning to the beef mixture and stir to combine. Reduce the heat to medium, cover and cook, stirring occasionally, for 12 mins or until the pasta is al dente. Remove the lid and cook for a further 5 mins or until the sauce is thickened. Remove the pan from the heat.
  4. Step 4 — Wilt spinach
Stir the spinach into the pasta mixture until wilted. Taste, then season with salt and pepper.
  5. Step 5 — Serve up
Divide the bolognese pasta among bowls and enjoy!
  6. Step 6 — Make it yours
Cheese and pasta are a match made in heaven. If you have any on hand, grate some cheddar or parmesan over the pasta before serving.
