Preheat the oven to 220C, fan-forced. Thinly slice the cucumber. Finely chop the onion. Halve the tomato and thinly slice.
Step 2 — Make pickles
Put 1 tbs white vinegar in a bowl. Add the cucumber, season with salt and toss to coat. Set aside to pickle, tossing occasionally, until needed.
Step 3 — Warm tortillas
Enclose the tortillas in foil. Put in the oven for 8 mins or until softened and warmed through.
Step 4 — Make beef filling
Meanwhile, heat 1 tsp olive oil in a medium frypan over medium heat. Cook the onion, stirring, for 3 mins or until softened. Add the beef mince and cook, breaking up the lumps with a spoon, for 3-4 mins until browned. Add the country seasoning and cook, stirring, for 30 secs or until fragrant. Remove the pan from the heat. Taste, then season with salt and pepper.
Step 5 — Serve up
Spread the tortillas with the mayonnaise. Top with the beef filling, tomato and drained pickles. Drizzle with the tomato sauce and dijon mustard (see Kitchen hack). Enjoy!
Step 6 — Kitchen hack
If you have mustard in a squeeze bottle, it's perfect for getting that classic squiggly drizzle; otherwise, just spread a little mustard on the tortillas.
