Preheat the oven to 220C, fan-forced. Finely chop the onion and tomatoes. Pick the coriander leaves and finely chop the stems. Cut the lime into wedges. Thinly slice the jalapeno (see Make it milder). Crush or finely chop 2 garlic cloves. Coarsely grate the cheese.
Step 2 — Make toppings
To make the pico de gallo, combine the onion, tomato, coriander stems and 2 tsp white wine vinegar in a bowl and season with salt and pepper. Put the guacamole in a separate bowl. Add one-quarter of the pico de gallo to the guacamole and stir to combine.
Step 3 — Brown beef mince
Heat 2 tsp olive oil in a medium frypan over high heat. Cook the beef mince, breaking up the lumps with a spoon, for 3-4 mins until browned. Add the garlic, chipotle (see Make it milder) and 1 tbs barbecue sauce and cook, stirring, for 30 secs or until fragrant.
Step 4 — Simmer mince
Add 60ml (¼ cup) water to the mince mixture and bring to a simmer. Cook, stirring, for 1-2 mins until slightly thickened. Remove the pan from the heat. Taste, then season with salt and pepper. Line an oven tray with baking paper. Spread the corn chips over the lined tray and scatter with the cheese. Bake for 4-5 mins until the cheese is melted.
Step 5 — Serve up
Put the yoghurt in a bowl, add the salsa and swirl to combine (see Make it milder). Transfer the corn chips to a board or large piece of baking paper on the table. Top with the mince mixture, pico de gallo, guacamole, yoghurt mixture, jalapeno and coriander leaves. Serve with lime wedges and enjoy! (The nutrition information is calculated on 3 serves.)
Step 6 — Make it milder
The jalapeno, chipotle and salsa all have a chilli kick. If you don't like too much heat, reduce the amount to taste. The jalapeno and salsa could be served separately at the table if you prefer.
