Combine the cumin and coriander spice blend, half the tomato paste*, 1 tbs yoghurt, 1½ tsp masala seasoning and 1 tbs oil in a large bowl and season with salt and pepper.
Step 2 — Marinate steaks
BEEF RUMP STEAK OPTION Add the steaks to the marinade and turn to coat.
Step 3 — Make masala yoghurt
Combine the remaining yoghurt and ½ tsp masala seasoning* in a bowl. Season with salt and pepper and set aside.
Step 4 — Heat tortillas
Heat a chargrill pan over medium-high heat until hot. Cook the tortillas, in batches, for 30 secs each side or until warmed through and slightly charred. Remove from the pan and over with a clean tea towel to keep warm.
Step 5 — Cook steaks
Reheat the chargrill pan over high heat until hot. (It's important to have the pan very hot before adding the beef, otherwise it may stew slightly and become tough.) Reduce the heat to medium-high and cook the steaks, turning regularly, for 4-6 mins for medium-rare, or until cooked to your liking. Remove from the pan and rest for 3 mins.
Step 6 — Toss salad and serve
Meanwhile, coarsely chop the tomato and cucumber. Combine 2 tsp extra virgin olive oil and 2 tsp white vinegar in a large bowl and season with salt and pepper. Add the spinach, tomato and cucumber to the dressing and toss to coat. Slice the steaks. Divide the steak tikka, tortillas and salad among plates. Drizzle with the masala yoghurt to serve.
