Bring a medium saucepan of salted water to the boil for the spaghetti. Finely chop the onion. Crush or finely chop the garlic. Coarsely grate the carrot. Crumble 1 stock cube* into a heatproof jug, add 125ml (½ cup) boiling water and stir to dissolve.
Step 2 — Start sauce
Heat 2 tsp olive oil in a large deep frypan over medium-high heat. Cook the onion and garlic, stirring regularly, for 2 mins or until softened. Add the beef mince and cook, breaking up the lumps with a spoon, for 3-4 mins until browned.
Step 3 — Cook sauce
Add the carrot, tomatoes, stock, 1½ tsp dried oregano* and ½ tsp sugar to the mince, season with salt and pepper and stir well to combine. Bring to a simmer, then reduce the heat to medium. Cook, covered, stirring occasionally, for 10 mins to develop the flavour.
Step 4 — Cook spaghetti
While the sauce is cooking, add three-quarters of the spaghetti* to the pan of boiling water (if you're tempted to cook all the spaghetti, just note the dish won't be as saucy). Cook, stirring occasionally, for 12 mins or until al dente. Drain.
Step 5 — Make zucchini salad
Meanwhile, peel the zucchini into ribbons with a vegetable peeler. Combine 3 tsp extra virgin olive oil, 1 tsp white wine vinegar, ¼ tsp dijon mustard and ½ tsp honey in a large bowl and season with salt and pepper. Add the zucchini and gently toss to combine.
Step 6 — Get ready to serve
Add the spaghetti to the sauce and cook, tossing constantly, for 30 secs or until the spaghetti is well coated. Divide the spaghetti and zucchini salad among bowls. Crumble over the feta to serve.
