Preheat the oven to 220C, fan-forced. Line an oven tray with baking paper. Cut the unpeeled potatoes into 1.5cm-thick fries and put on the lined tray. Drizzle with 2 tsp olive oil, scatter over half the barbecue seasoning, season with salt and pepper and toss to coat. Roast on the upper oven shelf for 20-25 mins until golden and tender.
Step 2 — Prep ingredients
Meanwhile, cut the chorizo in half lengthwise. Coarsely grate the cheese. Put the beef mince and remaining barbecue seasoning in a large bowl and season with salt and pepper. Using damp hands, combine well, then shape into 2 equal patties, slightly larger than the base of a bun.
Step 3 — Cook chorizo and eggs
Put the chorizo in a cold medium frypan over medium-high heat and cook, turning, for 4-5 mins until browned. Remove from the pan. If adding the eggs, heat 2 tsp olive oil in the pan over medium heat. Crack 2 eggs into the pan and cook for 3-4 mins until just set or cooked to your liking. Remove from the pan.
Step 4 — Cook beef patties
Heat 2 tsp olive oil in the same pan over medium-high heat. Cook the beef patties for 3 mins. Turn the patties, top with the cheese and cook, covered, for a further 3 mins or until the patties are cooked through and the cheese is melted.
Step 5 — Toast buns and toss salad
While the patties are cooking, cut the buns in half. Put on an oven tray, cut-side up, and bake on the lower shelf for 3-4 mins until lightly toasted. Combine 2 tsp red wine vinegar and 2 tsp olive oil in a large bowl and season with salt and pepper. Add the salad leaves and toss to coat.
Step 6 — Serve up
Spread the buns with the beetroot relish. Layer the bun bases with the beef patties, chorizo and fried eggs, then sandwich with the tops. Divide the burgers, fries and salad among plates. Serve with the barbecue sauce and enjoy!
