Ingredients

  • 125g brown rice
  • 150g green beans
  • 2clov garlic
  • 300g lean beef mince
  • 10g kofta seasoning
  • 50g tomato paste
  • 20g raisins
  • 130g natural yoghurt
  • 10ml olive oil
  • 5ml honey

Method

  1. Step 1 — Cook rice
    Fill a medium saucepan three-quarters full with water and bring to the boil. Add the rice and cook for 25-27 mins until tender. Drain. Meanwhile, trim the beans and halve lengthwise (or simply leave whole). Crush 2 garlic cloves (see Make it yours).
  2. Step 2 — Make meatballs
    Bring a small saucepan of water to the boil for the beans. Put the beef mince, half the kofta seasoning* and half the garlic in a large bowl and season with salt and pepper. Using damp hands, combine well, then roll into walnut-sized balls.
  3. Step 3 — Cook meatballs
    Heat 2 tsp olive oil in a medium frypan over medium-high heat. Cook the meatballs, turning occasionally, for 5-6 mins until browned and cooked through. Add half the tomato paste* and 1 tsp honey and cook, stirring, for 30 secs or until fragrant.
  4. Step 4 — Add rice
    Add the rice, raisins and 60ml (¼ cup) water to the meatballs and cook for 2 mins or until warmed through. Remove the pan from the heat. Taste, then season with salt and pepper.
  5. Step 5 — Serve up
    Meanwhile, cook the beans in the pan of boiling water for 2-3 mins until tender but still with crunch. Drain, then season with salt and pepper. Stir the remaining garlic into the yoghurt and season with salt and pepper. Divide the meatball mixture and beans among plates. Serve with the garlic yoghurt and enjoy!
  6. Step 6 — Make it yours
    When using raw garlic, it needs to be finely minced or crushed or it risks being overpowering. Adding a little salt to the garlic on the chopping board helps. Not a fan of raw garlic? Feel free to reduce the amount in the yoghurt in Step 5, to taste.
