Preheat the oven to 220C, fan-forced. Line an oven tray with baking paper. Cut the unpeeled sweet potato into 2cm-thick wedges. Put the sweet potato and 2 unpeeled garlic cloves on the lined tray, drizzle with 1 tsp olive oil and season with salt and pepper. Roast, turning halfway, for 25 mins or until the sweet potato is golden and tender.
Step 2 — Make chimichurri
Meanwhile, finely chop the parsley leaves, discarding the stems. Combine the parsley, 1 tbs olive oil, 2 tsp white wine vinegar and 1 tsp water in a bowl and season with salt and pepper.
Step 3 — Pan-fry steaks
Combine 2 tsp Cajun seasoning (see Kitchen notes) and 3 tsp olive oil in a large bowl and season with salt and pepper. Add steaks and turn to coat. Heat a medium frypan over high heat until hot (see Kitchen notes). Reduce heat to medium-high and cook steaks, turning regularly, for 4-6 mins for medium-rare, or until cooked to your liking. Remove from pan and rest for 3 mins.
Step 4 — Make corn slaw
While the steaks are resting, drain and rinse the corn. Combine 2 tbs mayonnaise and 1 tbs water in a large bowl and season with salt and pepper. Add the corn and kaleslaw mix and toss to coat.
Step 5 — Serve up
Squeeze the roasted garlic from the skins into a bowl and mash with a fork. Add the garlic to the chimichurri and stir to combine. Divide the steaks, sweet potato wedges and corn slaw among plates. Top the steaks with the chimichurri and enjoy!
Step 6 — Kitchen notes
If you don't like too much heat, reduce the Cajun seasoning to taste or simply season with salt and pepper instead. ~ It's important to have your pan very hot before adding the beef, otherwise it may stew slightly and become tough.
