Preheat the oven to 220C, fan-forced. Line 2 oven trays with baking paper. Crush or finely chop the garlic. Thinly slice the potatoes into rounds. Combine the garlic, South American seasoning, 3 tsp olive oil and 1 tsp honey in a large bowl and season with salt and pepper. Add the fish and turn to coat.
Step 2 — Roast potatoes
Bring a small saucepan of water to the boil for the peas. Put the potatoes on a lined tray, drizzle with 2 tsp olive oil and season with salt and pepper. Roast for 15-20 mins until almost tender.
Step 3 — Add fish
Put the fish on the remaining lined tray and bake for a further 10 mins or until the fish is cooked through and the potatoes are tender.
Step 4 — Cook greens
Meanwhile, add the peas to the pan of boiling water and cook for 2 mins or until tender. Drain. Heat 1 tsp olive oil in the pan over medium-high heat. Cook the capers, stirring, for 2 mins or until crispy. Add the peas, spinach, 1 tsp white wine vinegar and 1 tsp dijon mustard and toss to combine. Remove the pan from the heat. Taste, then season with salt and pepper.
Step 5 — Serve up
Divide the fish, potatoes and greens among plates. Drizzle any tray juices over the fish and enjoy!
Step 6 — Make it herby
