Ingredients

  • 300g chat potatoes
  • 1pcs cos lettuce
  • 1pcs tomato
  • 250g lamb mince
  • 5g mint and garlic seasoning
  • 25ml green goddess dressing
  • 2pcs egg
  • 20g butter

Method

  1. Step 1 — Prep ingredients
    Bring a medium saucepan of water to the boil for the potato. Bring a small saucepan of water to the boil for the eggs. Cut the unpeeled potatoes into 1cm-thick rounds. Trim the lettuce, then coarsely chop the leaves. Finely chop the tomato.
  2. Step 2 — Cook potato and eggs
    Add the potato to the medium pan of boiling water, reduce the heat to medium and cook for 8-10 mins until just tender. Drain the potato and reserve the pan. While the potato is cooking, add 2 eggs to the small pan of boiling water and cook for 6 mins for soft-boiled, or 8 mins for hard-boiled. Drain, then cool in cold water.
  3. Step 3 — Cook lamb patties
    Meanwhile, put the lamb mince in a large bowl and season with salt and pepper. Using damp hands (see Kitchen hack), combine well, then shape into 6 equal patties. Melt 5g butter in a medium frypan over medium-high heat. Cook the lamb patties for 2 mins each side or until browned and cooked through. Remove the pan from the heat.
  4. Step 4 — Season potato
    Melt 15g butter in the reserved pan over medium heat. Add the mint and garlic seasoning and cook, stirring, for 1 min or until fragrant. Add the potato and gently stir to coat. Remove the pan from the heat.
  5. Step 5 — Serve up
    Peel and quarter the eggs. Divide the lettuce, potato, lamb patties, tomato and egg among bowls. Drizzle with the green goddess dressing and enjoy!
  6. Step 6 — Kitchen hack
    If you make the lamb patties with dry hands, you'll find the mince will stick to them. Rinse your hands under water or lightly oil them before making the patties.
