Ingredients

  • 1pcs ginger
  • 2clov garlic
  • 1pcs onion
  • 1pcs tomato
  • 1bunch curry leaves
  • 20g roasted peanuts
  • 250g cauliflower
  • 10g masala seasoning
  • 300g beef stir-fry
  • 23ml neutral-flavoured oil
  • 10ml soy sauce
  • 5ml honey

Method

  1. Step 1 — Prep ingredients
    Peel and finely grate the ginger. Crush or finely chop the garlic. Thinly slice the onion. Coarsely chop the tomato. Strip the curry leaves, discarding the stems. Coarsely chop the peanuts. Coarsely grate the cauliflower, including the stem (or process coarsely chopped cauliflower in a food processor using the pulse button until it resembles rice).
  2. Step 2 — Marinate beef
    Combine the ginger, half the masala seasoning*, half the garlic and 2 tsp oil in a large bowl and season with pepper. Separate the beef stir-fry, add to the marinade and toss to coat.
  3. Step 3 — Brown beef
    Heat a medium frypan over high heat until very hot (beef stir-fry is best with hot, fast cooking; get the pan very hot before adding the beef and stick to the short cooking time). Stir-fry the beef for 1-2 mins until browned. Remove from the pan, reserving the pan.
  4. Step 4 — Cook cauliflower rice
    Heat 2 tsp oil in a large deep frypan over medium-high heat (using a large pan with maximum surface area ensures the cauliflower cooks evenly and doesn't become soggy). Cook the cauliflower and remaining garlic, stirring occasionally, for 5-7 mins until lightly browned and tender. Season with salt and pepper.
  5. Step 5 — Cook aromatics
    Meanwhile, heat 2 tsp oil in the reserved pan over medium-high heat. Cook the onion and curry leaves, stirring, for 3 mins or until the onion is starting to soften.
  6. Step 6 — Get ready to serve
    Add the beef and any resting juices to the onion mixture. Add the tomato, 2 tsp soy sauce and 1 tsp honey. Cook, stirring, for 1-2 mins until the tomato is slightly softened. Divide the cauliflower rice and beef stir-fry among bowls. Scatter with the peanuts to serve.
