Finely chop the onion. Coarsely chop the mint leaves, discarding the stems. Crush or finely chop 1 garlic clove.
Step 2 — Toast almonds
Put the almonds in a cold medium frypan over medium heat. Toast, tossing, for 3-4 mins until evenly golden. Remove from the pan.
Step 3 — Brown lamb mince
Meanwhile, heat 2 tsp olive oil in a separate medium frypan over medium heat. Cook the onion, stirring, for 4-5 mins until soft. Increase the heat to high, add the lamb mince and cook, breaking up the lumps with a spoon, for 3-4 mins until browned.
Step 4 — Add seasoning
Add the garlic and Moroccan seasoning to the mince, reduce the heat to medium-high and cook, stirring, for 1 min or until fragrant. Stir in 1 tsp honey and 2 tbs water and simmer for 1-2 mins until slightly reduced. Remove the pan from the heat.
Step 5 — Serve up
While the mince is simmering, cook the cauliflower rice in the reserved pan over medium-high heat, stirring, for 3-4 mins until warmed through. Season with salt and pepper. Divide the cauliflower rice and Moroccan lamb among bowls. Scatter over the toasted almonds and mint and enjoy!

Like it hot? Kick up the heat a notch or two with a scattering of chopped fresh chilli or chilli flakes.
