Ingredients
2pcs pork loin steaks
20g chipotle in adobo sauce
20g roasted peanuts
1pcs Lebanese cucumber
1pcs lime
50g smoky aioli
200g slaw mix
10ml olive oil
5ml extra virgin olive oil
3ml red or white wine vinegar
Method
Step 1 — Brown pork
Heat 2 tsp olive oil in a medium frypan over medium-high heat. Season the pork with salt and pepper. Cook the pork for 3-4 mins each side until golden (the pork won't be cooked through).
Step 2 — Start prep
While the pork is browning, combine the chipotle and 2 tbs water in a bowl. Finely chop the peanuts.
Step 3 — Finish prep
Peel the cucumber into ribbons with a vegetable peeler. Cut the lime into wedges.
Step 4 — Add chipotle
Add the chipotle mixture to the pork and cook, turning regularly, for 2 mins or until the sauce is thickened and the pork is cooked through (pork will be cooked to blush pink, which is desired to ensure the meat is tender and juicy). Remove the pork from the pan and spoon over the sauce. Scatter the peanuts over the top of the pork and rest for 4 mins.
Step 5 — Make dressing
Meanwhile, combine the aioli, 1 tsp extra virgin olive oil, ½ tsp red wine vinegar and 2 tsp water in a large bowl and season with salt and pepper.
Step 6 — Toss slaw and serve
Add the slaw mix and cucumber to the dressing and toss to combine. Divide the pork and slaw among plates and drizzle the pork with the resting juices. Serve with the lime wedges.
