1head broccoli
1pcs capsicum
2clov garlic
2g chilli flakes
10g Italian seasoning
200g tomato passata
50g tomato paste
10g capers
200g peeled prawns
50g feta
15g butter
1pcs olive oil spray
15ml olive oil
Method
Step 1 — Roast broccoli
Remove 15g butter from the fridge to soften. Preheat the oven to 180C, fan-forced. Line an oven tray with baking paper. Cut the broccoli through the head and stem into 2cm-thick slices. (Don't worry if some of the florets break into smaller pieces.) Put the broccoli on the lined tray and spray with olive oil. Lightly season with salt and pepper. Roast for 20 mins or until tender.
Step 2 — Prep capsicum and garlic
While the broccoli is roasting, thinly slice the capsicum. Crush or finely chop the garlic.
Step 3 — Start sauce
Heat 3 tsp olive oil in a medium deep frypan over high heat. Cook the capsicum, stirring occasionally, for 3 mins or until slightly softened. Reduce the heat to medium-high. Add half the garlic and ¼ tsp chilli flakes (you can omit the chilli if preferred) and cook, stirring, for 30 secs or until fragrant.
Step 4 — Simmer sauce
Add the Italian seasoning, tomato passata, half the tomato paste* and 80ml (⅓ cup) water and bring to the boil. Reduce the heat to low, cover and cook for 8 mins to develop the flavour.
Step 5 — Add caper butter
Meanwhile, finely chop the capers. Mash the capers, softened butter and remaining garlic in a bowl with a fork until combined. Season with pepper. Dot the broccoli with the caper butter and roast for a further 3 mins or until the butter is melted.
Step 6 — Cook prawns and serve
Season the prawns with salt and pepper. Add the prawns to the sauce, increase heat to medium and cook, uncovered, for 4 mins or until the prawns are just cooked through. Taste the sauce, then season with salt and pepper. Divide broccoli and prawn mixture among bowls. Crumble over the feta and scatter with a pinch of chilli flakes*, if desired, to serve.
