1pcs onion
1bunch curry leaves
1bunch coriander
250g cauliflower
100g kale
10g masala seasoning
400g can cherry tomatoes
2g chilli flakes
200ml coconut milk
20g shredded coconut
1pcs Lebanese cucumber
10ml neutral-flavoured oil
15ml white vinegar
Method
Step 1 — Prep ingredients
Preheat the oven to 180C, fan-forced. Finely chop the onion. Strip the curry leaves, discarding the stems. Coarsely chop the coriander, keeping the stems and leaves separate. Cut the cauliflower stem into 1cm chunks, then cut the head into small florets. Tear the kale leaves into small pieces, discarding the stems.
Step 2 — Cook onion
Heat 2 tsp oil in a medium deep frypan over medium-high heat. Cook the onion, stirring regularly, for 3 mins or until beginning to soften.
Step 3 — Cook vegetables
Add the masala seasoning, curry leaves, coriander stem, cauliflower, tomatoes and ½ tsp chilli flakes* to the onion (if preferred, omit the chilli when cooking and serve it at the table). Cook, stirring, for 1 min or until combined.
Step 4 — Cook curry
Stir the coconut milk into the vegetables, season with salt and pepper and bring to a simmer. Reduce the heat to medium-low and cook, covered, for 6 mins to develop the flavour. (It's important the curry doesn't boil or the coconut milk may separate.)
Step 5 — Make cucumber sambal
Meanwhile, put the coconut in a cold small frypan over medium heat and season with salt and pepper. Toast, tossing, for 2-3 mins until evenly golden. Remove from the pan. Coarsely chop the cucumber. Transfer the coconut to a bowl, add the cucumber, remaining coriander and 1 tsp white vinegar and stir to combine.
Step 6 — Get ready to serve
Stir the kale and 2 tsp white vinegar into the curry and cook, covered, stirring occasionally, for 5 mins or until the kale and cauliflower are tender and the curry is slightly thickened. Divide the curry and cucumber sambal among bowls to serve.
