Preheat the oven to 200C, fan-forced. Line a large oven tray with baking paper. Cut the zucchini into 1cm-thick rounds. Thinly slice the spring onion. Halve the prawns horizontally (see Kitchen 101).
Step 2 — Cook bacon and zucchini
Heat 1 tsp olive oil in a medium frypan over medium-high heat. Cook the bacon, stirring, for 4-5 mins until crisp. Remove with a slotted spoon, leaving the flavoured oil in the pan. Add the zucchini to the pan and cook over medium-high heat, stirring, for 3-4 mins until slightly softened. Remove the pan from the heat.
Step 3 — Assemble pizzas
Spread 2 pita* with the tomato paste. Top with the zucchini, bacon and prawns. Scatter over the breadcrumbs and country seasoning, then drizzle with 1 tbs olive oil.
Step 4 — Bake pizzas
Put the pizzas on the lined tray and bake for 8-9 mins until golden and the prawns are cooked through.
Step 5 — Serve up
Meanwhile, combine 1 tbs mayonnaise and 1 tsp water in a bowl. Drizzle the pizzas with the mayonnaise and scatter over the spring onion. Cut into wedges and enjoy!
Step 6 — Kitchen 101
Halving the prawns horizontally means they are thinner and faster to cook, and it's easier to distribute them evenly over the pizza. They also curl into a cute spiral shape when cooked.
