Ingredients

  • 300g chat potatoes
  • 40g panko breadcrumbs
  • 10g country seasoning
  • 2pcs Tasmanian salmon fillets
  • 1pcs tomato
  • 50g mixed salad leaves
  • 50g maple and mustard dressing
  • 26ml olive oil

Method

  1. Step 1 — Roast potatoes
    Preheat the oven to 220C, fan-forced. Line 2 oven trays with baking paper. Put the unpeeled potatoes on a lined oven tray, drizzle with 2 tsp olive oil, season with salt and pepper and turn to coat. Roast the potatoes for 22 mins or until almost tender.
  2. Step 2 — Prep ingredients
    While the potatoes are roasting, put the breadcrumbs, half the country seasoning and 1 tbs olive oil in a shallow dish and massage with your fingertips until combined (see Kitchen 101).
  3. Step 3 — Smash potatoes
    Remove the potatoes from the oven and, using a potato masher or the back of a large spoon, lightly press down on each potato to smash. Scatter with the remaining country seasoning, drizzle with 1 tsp olive oil and roast on the lower oven shelf for a further 8-10 mins until golden and tender.
  4. Step 4 — Roast salmon
    Meanwhile, firmly press the flesh sides of the salmon into the crumb mixture. Transfer to the remaining lined tray, crumb-side up, and scatter with any remaining crumb mixture. Roast on the upper shelf for 8-10 mins until the salmon is just cooked or cooked to your liking.
  5. Step 5 — Serve up
    Coarsely chop the tomato. Put the tomato and salad leaves in a bowl, drizzle with half the maple mustard dressing and toss to combine. Divide the salmon, potatoes and salad among plates. Drizzle the potatoes with the remaining maple mustard dressing and enjoy!
  6. Step 6 — Kitchen 101
    Massaging, or rubbing, the oil into the crumb mixture gives the crumbs a lovely golden colour when baked in the oven.
