Preheat the oven to 180C, fan-forced. Line an oven tray with foil. Finely chop the spring onions. Finely grate half the ginger*. Crush or finely chop 2 garlic cloves. Put the chicken flat on a board, put your hand on top and halve horizontally into fillets. Crumble the stock cubes into a heatproof jug, add 250ml (1 cup) boiling water and stir to dissolve.
Step 2 — Cook rice
Rinse the rice until the water runs clear. Put the rice, stock, half the spring onion and half the ginger in a small saucepan, cover and bring to a simmer over medium heat. Reduce the heat to low and cook for 12 mins or until tender and the water is absorbed. Turn off the heat and stand, covered, for at least 5 mins. Fluff the rice with a fork.
Step 3 — Make spring onion oil
Meanwhile, combine the garlic, remaining spring onion and remaining ginger in a heatproof bowl. Heat 2 tbs vegetable oil in a small saucepan over high heat until very hot, then carefully pour the hot oil over the spring onion mixture and stir to combine. Clean the pan and reserve.
Step 4 — Bake chicken
Put the chicken on the lined tray, season with salt and pepper and drizzle with the spring onion oil. Cover the tray with another sheet of foil and fold the edges together to seal tightly. Bake for 12-13 mins until the chicken is cooked through.
Step 5 — Serve up
While the chicken is baking, fill the reserved pan with water and bring to the boil. Trim the pak choy and separate the leaves. Cook the pak choy in the pan of boiling water for 2 mins or until tender. Drain. Slice the chicken. Divide the rice, chicken and pak choy among plates. Drizzle the chicken with the tray juices and serve with soy sauce for dipping. Enjoy!
Step 6 — Make it yours
We've served our dish with soy sauce, but Hainanese chicken is traditionally served with small dipping bowls of sweet dark soy sauce (or kecap manis), ginger sauce and chilli sauce.
