Preheat the oven to 220C, fan-forced. Thinly slice the cucumber. Finely chop the onion. Halve the tomato and thinly slice.
Step 2 — Make pickles
Put 1 tbs white vinegar in a bowl. Add the cucumber, season with salt and toss to combine. Set aside to pickle, tossing occasionally, until needed.
Step 3 — Warm tortillas
Enclose the tortillas in foil. Put in the oven for 8 mins or until softened and warmed through.
Step 4 — Make beef filling
Meanwhile, heat 1 tsp olive oil in a medium frypan over medium heat. Cook the onion, stirring, for 3 mins or until softened. Add the beef mince and cook, breaking up the lumps with a spoon, for 3-4 mins until browned. Add the country seasoning and cook, stirring, for 30 secs or until fragrant. Remove the pan from the heat. Taste, then season with salt and pepper.
Step 5 — Serve up
Spread the tortillas with the mayonnaise. Top with the beef filling, tomato, cheese and drained pickles. Drizzle with the tomato sauce and dijon mustard (see Kitchen hack). Enjoy!
Step 6 — Kitchen hack
If you have mustard in a squeeze bottle, it's perfect for getting that classic squiggly drizzle; otherwise, just spread a little mustard on the tortillas.
