Ingredients

  • 2clov garlic
  • 1pcs capsicum
  • 1pcs spring onion
  • 100g smoked cheddar
  • 600g lean beef mince
  • 20g Tex-Mex seasoning
  • 400g diced tomatoes
  • 2pcs flour tortillas
  • 100g mixed salad leaves
  • 19ml olive oil
  • 5ml sugar
  • 19ml extra virgin olive oil
  • 15ml red or white wine vinegar
  • 3ml dijon mustard

Method

  1. Step 1 — Prep ingredients
    Crush or finely chop the garlic. Thinly slice the capsicum and spring onion. Coarsely grate the cheese.
  2. Step 2 — Brown beef mince
    Heat 1 tbs olive oil in a large frypan over high heat. Cook the beef mince, breaking up the lumps with a spoon, for 3-4 mins until browned.
  3. Step 3 — Simmer mince
    Add the garlic and Tex-Mex seasoning to the mince and cook, stirring, for 1 min or until fragrant. Add the tomatoes, 1 tsp sugar and 200ml water and bring to a simmer. Cook, covered, stirring occasionally, for 10 mins or until most of the liquid is absorbed. Taste, then season with salt and pepper.
  4. Step 4 — Make capsicum salsa
    Meanwhile, heat 1 tsp olive oil in a medium frypan over high heat. Cook the capsicum, stirring occasionally, for 3-4 mins until slightly charred. Transfer the capsicum to a bowl and cool slightly. Add the spring onion, 3 tsp extra virgin olive oil and 2 tsp red wine vinegar, season with salt and pepper and stir to combine.
  5. Step 5 — Warm tortillas
    Put half the tortillas on a plate, slightly overlapping, and microwave for 30 secs or until warmed through. Repeat with the remaining tortillas.
  6. Step 6 — Dress leaves and serve
    Put 2 tsp extra virgin olive oil, 1 tsp red wine vinegar and ½ tsp dijon mustard in a large bowl, season with salt and pepper and whisk to combine. Add the salad leaves and toss to coat. Divide the mince mixture, cheese, capsicum salsa and some of the dressed leaves among the tortillas. Serve the tacos with the remaining dressed leaves.
