Preheat the oven to 200C, fan-forced. Line an oven tray with baking paper. Thinly slice the chives. Coarsely grate the cheese. Halve the buns.
Step 2 — Toast buns
Put the buns on the lined tray, cut-side up, scatter with the cheese and bake for 8 mins or until the buns are toasted and the cheese is melted.
Step 3 — Heat lamb
Meanwhile, put the braised lamb in a microwave-safe bowl. Heat in the microwave for 3 mins, then stir. Heat for a further 2-3 mins until hot. Transfer the lamb to a sieve to drain for 2 mins, discarding the liquid. Return the lamb to the bowl, add 1 tbs tomato sauce and stir to combine.
Step 4 — Serve up
While the lamb is heating, put the chives, slaw mix and ranch dressing in a bowl, season with salt and pepper and toss to combine. Fill the cheesy buns with some of the slaw and the lamb mixture. Serve the sloppy joes with the remaining slaw and enjoy!
