Preheat the oven to 220C, fan-forced. Line 2 oven trays with baking paper. Peel the potato, then cut into matchsticks (see Kitchen notes) and put on a lined tray. Drizzle with 2 tsp olive oil, scatter over 1 tsp chermoula seasoning, season with salt and pepper and toss to coat. Bake on the upper oven shelf, turning halfway, for 25-30 mins until golden.
Step 2 — Bake zucchini
While the fries are baking, cut the zucchini into thick batons. Thinly slice the onion. Finely chop the tomato. Put the zucchini on the remaining lined tray, drizzle with 2 tsp olive oil and season with salt and pepper. Bake on the lower shelf for 20 mins or until tender.
Step 3 — Make tomato jam
Meanwhile, heat 2 tsp olive oil in a small frypan over medium heat. Cook the onion for 4-5 mins until softened. Add the tomato, 1 tbs white wine vinegar and 3 tsp sugar and bring to the boil. Reduce the heat to medium and cook, stirring, for 5-6 mins until thickened. Taste, then season with salt and pepper. Remove the pan from the heat.
Step 4 — Pan-fry salmon
Combine 1 tsp chermoula seasoning and 2 tsp olive oil in a large bowl and season with salt and pepper. Add the salmon and turn to coat. Heat a small frypan over high heat. Cook salmon, skin-side down, for 3 mins or until skin is crisp and golden. Reduce heat to medium-high, turn and cook, flesh-side down, for 2-3 mins until just cooked or cooked to your liking. Remove from the pan.
Step 5 — Serve up
Divide the salmon, French fries and zucchini among plates. Spoon over the tomato jam and enjoy!

Here's an easy way to cut the potato into matchsticks: thinly slice lengthwise, then stack the slices and cut into matchsticks. ~ Our chermoula seasoning has a slight chilli kick. For those who prefer less heat, reduce the amount on the fries and salmon to taste.
