Ingredients
2pcs potato
300g free-range chicken breast fillet
1clove garlic
400g diced tomatoes
5g Italian seasoning
150g green beans
1head broccoli
15ml olive oil
5ml sugar
5ml balsamic vinegar
20g butter
5ml wholegrain mustard
Method
Step 1 — Cook potato
Peel the potatoes and cut into 2cm chunks. Put in a small saucepan, cover with cold salted water and bring to the boil. Reduce the heat to medium and cook for 10 mins or until tender. Drain, then return the potato to the pan and cover to keep warm. (For fluffy mash, drain the potatoes well, then leave in the hot pan for a few minutes to evaporate any moisture.)
Step 2 — Brown chicken
Meanwhile, put the chicken flat on a board, put your hand on top and halve horizontally into fillets. Season with salt and pepper. Heat 2 tsp olive oil in a medium deep frypan over high heat. Cook the chicken for 1-2 mins each side until golden (the chicken won't be cooked through). Remove from the pan.
Step 3 — Make tomato sauce
Crush or finely chop garlic. Heat 2 tsp olive oil in the same pan over medium-high heat. Cook garlic for 30 secs or until fragrant. Add the tomatoes, Italian seasoning, 60ml (¼ cup) water, 1 tsp sugar and 1 tsp balsamic vinegar and bring to a simmer. Reduce the heat to medium and cook, stirring occasionally, for 10 mins or until reduced.
Step 4 — Prep vegetables
While the tomato sauce is cooking, bring a medium saucepan of water to the boil for the vegetables. Trim the beans and halve on an angle. Coarsely chop the broccoli stem, then cut the head into small florets.
Step 5 — Cook chicken
Add the chicken and any resting juices to the tomato sauce, cover and cook for a further 4-5 mins until the chicken is cooked through. Taste the sauce, then season with salt and pepper.
Step 6 — Get ready to serve
Add the beans and broccoli to the pan of boiling water and cook for 2-3 mins until tender. Drain. Mash the potato until smooth. Add 20g butter and 1 tsp wholegrain mustard, season with salt and pepper and stir until combined. Divide the mashed potato, chicken, tomato sauce and vegetables among plates to serve.
