Ingredients

  • 1pcs onion
  • 2clov garlic
  • 100g silverbeet
  • 1bunch rosemary
  • 30g pitted kalamata olives
  • 300g free-range chicken thigh fillets
  • 2g dried oregano
  • 400g diced tomatoes
  • 50g tomato paste
  • 2g chilli flakes
  • 380g cannellini beans
  • 26ml extra virgin olive oil
  • 8ml honey
  • 1pcs boiling water
  • 3ml red or white wine vinegar

Method

  1. Step 1 — Prep ingredients
    Coarsely chop the onion. Crush or finely chop the garlic. Thinly slice the silverbeet stems, then coarsely chop the leaves, keeping them separate. Strip the rosemary leaves, discarding the stems. Halve the olives.
  2. Step 2 — Prep chicken
    Cut the chicken into bite-sized chunks. Season with salt and pepper.
  3. Step 3 — Start cacciatore
    Heat 1 tbs extra virgin olive oil in a medium deep frypan over high heat. Cook the onion, garlic, silverbeet stems, dried oregano, chicken and half the rosemary, stirring occasionally, for 4 mins or until the onion has softened. Season with salt and pepper.
  4. Step 4 — Finish cacciatore
    Add the tomatoes, half the tomato paste*, a pinch of chilli flakes* (omit chilli if preferred), 60ml (¼ cup) water and 1½ tsp honey to chicken mixture, stir to combine, then bring to the boil. Reduce heat to medium and cook, stirring halfway, for 9 mins or until chicken is cooked through and sauce is slightly reduced. Add olives. Taste, then season with salt and pepper.
  5. Step 5 — Make bean mash
    While the cacciatore is cooking, drain and rinse the beans. Put the beans, remaining rosemary, 2 tbs water and 2 tsp extra virgin olive oil in a small saucepan over high heat. Cook, stirring regularly, for 2 mins or until hot. Remove the pan from the heat, then coarsely mash. Season with salt and pepper.
  6. Step 6 — Wilt silverbeet and serve
    Meanwhile, put the silverbeet leaves in a heatproof bowl, cover with boiling water and stand for 5 mins to soften. Drain well, then drizzle with 1 tsp extra virgin olive oil, ½ tsp red wine vinegar and season with salt and pepper. Divide the bean mash, chicken cacciatore and silverbeet among bowls to serve.
