Preheat the air fryer to 200C (see cooking tip). Cut the unpeeled potatoes into 1.5cm- thick fries. Put the potato in a large bowl, drizzle with 2 tsp extra virgin olive oil and season with salt and pepper, then toss to coat. Put the fries in the air-fryer basket and air-fry, shaking the basket halfway, for 13-14 mins until golden and tender.
Step 2 — Crumb chicken
Meanwhile, put the chicken flat on a board, put your hand on top and halve horizontally into fillets. Whisk 1 egg in a bowl. Combine 1 tbs flour and a pinch of salt in a shallow dish. Put the breadcrumbs in a separate shallow dish. Dust the chicken with the flour, shake off the excess, then dip in the egg and coat in the breadcrumbs.
Step 3 — Start chicken parmi
Remove the fries from the air-fryer basket. Generously spray both sides of the crumbed chicken with olive oil and put in the air-fryer basket, in batches if necessary. Air-fry the chicken, turning halfway, for 10 mins.
Step 4 — Finish chicken parmi
Combine the tomato passata and Italian seasoning in a bowl. Spoon the tomato mixture over the chicken, then scatter with the cheese. Air-fry for a further 2-3 mins until the cheese is melted and the chicken is cooked through.
Step 5 — Make salad
While the chicken is air-frying, coarsely chop the tomato. Combine 2 tsp extra virgin olive oil and 2 tsp white wine vinegar in a large bowl and season with salt and pepper. Add the rocket and tomato to the dressing and toss to combine.
Step 6 — Get ready to serve
Remove the chicken parmi from the air-fryer basket. Add the fries to the basket and air-fry for 1-2 mins until hot. Divide the chicken parmi, fries and salad among plates to serve.
