Ingredients

  • 150g jasmine rice
  • 1pcs pak choy
  • 1pcs capsicum
  • 2clov garlic
  • 300g basa fish fillets
  • 50g oyster sauce
  • 10g fried shallots
  • 15ml soy sauce
  • 10ml honey
  • 19ml vegetable oil

Method

  1. Step 1 — Cook rice
    Rinse the rice until the water runs clear. Put in a small saucepan with 250ml (1 cup) water, cover and bring to a simmer over medium heat. Reduce the heat to low and cook for 12 mins or until tender and the water is absorbed. Turn off the heat and stand, covered, for at least 5 mins. Fluff the rice with a fork.
  2. Step 2 — Prep ingredients
    Meanwhile, cut the pak choy into thirds, keeping the stems and leaves separate. Thinly slice the capsicum. Crush or finely chop 2 garlic cloves. Pat the fish dry with paper towel. Combine the oyster sauce, 1 tbs soy sauce and 2 tsp honey in a bowl.
  3. Step 3 — Pan-fry fish
    Heat 3 tsp vegetable oil in a medium frypan over medium heat. Cook the fish for 3½-4 mins each side until lightly browned and cooked through (see Kitchen 101). Remove from the pan, then break into large pieces. Scrape up any crispy bits from the base of the pan and reserve.
  4. Step 4 — Stir-fry veggies
    Heat 2 tsp vegetable oil in the same pan over medium-high heat. Stir-fry the capsicum and pak choy stems for 2 mins. Add the pak choy leaves and garlic and stir-fry for 1 min or until fragrant. Add the oyster sauce mixture and stir-fry for a further 30 secs or until well combined. Remove the pan from the heat. Taste, then season with salt and pepper.
  5. Step 5 — Serve up
    Add the fish to the veggies and gently turn to coat in the sauce. Divide the rice among bowls, top with the stir-fry and scatter over the fried shallots and any reserved crispy fish bits. Enjoy!
  6. Step 6 — Kitchen 101
    Not sure if your fish is cooked through? Simply use a fork or the tip of a knife to take a peek inside the thickest part of the flesh; if it comes apart easily, the fish is cooked.
