Discard the husk and silks from the corn. Finely chop the onion and tomatoes. Reserve half the coriander sprigs, then finely chop the remaining leaves, including the stems.
Step 2 — Chargrill corn
Brush the corn cob with 2 tsp olive oil and season with salt and pepper. Heat a chargrill pan over high heat until hot. Cook the corn, turning regularly, for 8-10 mins until tender and lightly charred. Remove from the pan and cover to keep warm. Reserve the pan.
Step 3 — Make salsa
While the corn is cooking, combine 1 tsp red wine vinegar and ½ tsp sugar in a bowl and season with salt and pepper. Add the onion, chopped coriander and two-thirds of the tomato and toss to combine.
Step 4 — Chargrill tortillas
Heat the reserved chargrill pan over medium-high heat. Warm the tortillas, one at a time, for 30 secs-1 min each side until heated through and slightly charred (see cooking tip). Cover with a clean tea towel to keep warm.
Step 5 — Cook pulled pork
Meanwhile, crumble 1 stock cube* into a bowl. Add the chipotle and cumin and coriander spice blend and stir to combine. Heat 2 tsp olive oil in a medium frypan over medium heat. Cook the pulled pork, chipotle mixture and remaining tomato, stirring occasionally, for 5 mins or until combined and hot. Taste, then season with salt and pepper.
Step 6 — Cut corn and lime cheeks
Cut the cheeks off the lime. Cut the corn cob in half and spread with the aioli. Fill the tortillas with the pork mixture, then top with the salsa and coriander sprigs. Divide the pork carnitas tacos and charred corn among plates. Serve with the lime cheeks.
