Preheat the oven to 220C, fan-forced. Line a large oven tray with baking paper. Thinly slice the tomato. Halve the olives. Peel the zucchini into ribbons with a vegetable peeler. Pick the mint leaves, discarding the stems. Thinly slice the chorizo on an angle.
Step 2 — Soften zucchini
Pour 1 tbs oil from the marinated goat cheese into a medium frypan over high heat (see Make it faster). Cook the zucchini, stirring, for 1-2 mins until just tender.
Step 3 — Assemble pizzas
Put 2 pita* on the lined tray. Spread with the tomato paste and top with the tomato, zucchini and chorizo. Scatter over the olives.
Step 4 — Bake pizzas
Bake the pizzas for 10-12 mins until golden.
Step 5 — Serve up
Drain 1 tbs oil from the marinated goat cheese into a bowl. Add 2 tsp honey, season with salt and pepper and whisk to combine. Crumble the goat cheese over the pizzas and drizzle with the honey dressing. Scatter over the mint leaves, cut into wedges and enjoy!
Step 6 — Make it faster
Short on time? Skip this step and simply put the raw zucchini ribbons on the pizza bases. The zucchini will just be a bit crispier once baked.
