Bring a medium saucepan of salted water to the boil for the spaghetti. Finely chop the carrot. Crush or finely chop the garlic. Put the sunflower seeds in a cold medium deep frypan over medium heat. Toast, tossing, for 2-3 mins until evenly golden. Remove from the pan.
Step 2 — Brown beef mince
Heat 2 tsp olive oil in the same pan over high heat. Cook the beef mince and carrot, breaking up the lumps with a spoon, for 3-4 mins until browned. Add the garlic, half the tomato paste* and half the oregano* and cook, stirring, for 30 secs or until fragrant and combined.
Step 3 — Simmer sauce
Add the tomato passata, ½ tsp sugar and 60ml (¼ cup) water to the mince mixture and bring to a simmer. Reduce the heat to medium and cook, stirring halfway, for 8 mins or until slightly reduced. Remove the pan from the heat. Taste, then season with salt and pepper.
Step 4 — Cook spaghetti
Meanwhile, cook three-quarters of the spaghetti* in the pan of boiling water for 12 mins or until al dente. Reserve 2 tbs cooking water, then drain. Add the spaghetti to the sauce. Gradually add the reserved cooking water, stirring constantly, until the sauce coats the pasta and looks slightly glossy. Taste, then season with salt and pepper.
Step 5 — Make salad and serve up
Combine 2 tsp olive oil and 1 tsp red wine vinegar in a large bowl and season with salt and pepper. Add the salad leaves and sunflower seeds and toss to combine. Divide the spaghetti bolognese among bowls, serve with the salad and enjoy!
Step 6 — Make it cheesy
Pasta loves cheese! If you have some on hand, scatter grated cheddar, parmesan or pecorino over the spag bol before serving. Crumbled feta or marinated goat cheese would also be delicious.
