Preheat the oven to 220C, fan-forced. Line an oven tray with baking paper. Halve the zucchini lengthwise and thinly slice on an angle. Crush or finely chop the garlic. Finely chop the parsley, including the stems. Finely grate ½ tsp lemon zest. Cut the lemon into wedges. Cut the garlic bread into 3cm-thick fingers. Chop 20g butter (see Make it yours).
Step 2 — Assemble tray bake
Put the zucchini, garlic, parsley, lemon zest, prawns and ¼ tsp chilli flakes, if using, on the lined tray. Season with salt and pepper and toss to combine. Spread in an even layer, then scatter with the butter. Top with the garlic bread, buttered-side down.
Step 3 — Cook tray bake
Bake the tray bake for 12 mins or until the prawns are cooked through and the bread is toasted.
Step 4 — Make salad
Meanwhile, peel the carrot into ribbons with a vegetable peeler. Combine 2 tsp olive oil and 1 tsp red wine vinegar in a large bowl. Add the carrot and salad leaves and toss to combine.
Step 5 — Serve up
Pop the tray bake on the table for everyone to help themselves. Serve with the salad and lemon wedges and enjoy!

We've scattered the chopped butter over the tray bake in Step 2. If you prefer, drizzle with olive oil instead.
