Ingredients

  • 150g green beans
  • 40g radish
  • 10g toasted sesame seeds
  • 2pcs barramundi fillets
  • 150g egg noodles
  • 20g miso paste
  • 15ml white vinegar
  • 10ml sugar
  • 10ml vegetable oil
  • 15ml plain flour
  • 15ml soy sauce

Method

  1. Step 1 — Prep ingredients
    Bring a medium saucepan of water to the boil for the noodles. Trim the beans and halve on an angle. Thinly slice the radish. Combine half the sesame seeds, 2 tsp white vinegar and 1 tsp sugar in a large bowl. Add the radish and toss to combine. Set aside to pickle, tossing occasionally, until needed.
  2. Step 2 — Prep and cook fish
    Put 1 tbs plain flour in a shallow bowl and season with salt and pepper. Pat the fish dry with paper towel and coat in the flour. Heat 2 tsp vegetable oil in a medium deep frypan over medium-high heat. Cook the fish, skin-side down, covered, for 3 mins. Turn and cook, uncovered, for 4 mins or until cooked through. Remove from the pan and season with salt. Reserve the pan.
  3. Step 3 — Cook noodles and beans
    Meanwhile, cook the noodles and beans in the pan of boiling water for 2-3 mins until tender. Drain, then rinse under hot water to prevent the noodles from sticking.
  4. Step 4 — Make sauce
    Return the reserved pan to medium-high heat. Add 80ml (⅓ cup) water and cook, stirring, for 1 min to deglaze. Stir in the miso, 3 tsp soy sauce, 1 tsp white vinegar and 1 tsp sugar and cook for 1 min or until well combined. Stir in the noodles and beans until well coated. Remove the pan from the heat. Taste, then season with salt and pepper.
  5. Step 5 — Serve up
    Divide the miso noodles and beans, barramundi and pickled radish among plates, then drizzle with the pickling liquid. Scatter over the remaining sesame seeds and enjoy!

    Cooking times may vary depending on thickness of fillets. To check if your fish is cooked through, simply use a fork or the tip of a knife to take a peek inside the thickest part of the fish; if it comes apart easily, the fish is cooked.
