1pcs neutral-flavoured oil, for shallow frying + 2 tsp
10ml soy sauce
1pinch pinch of sugar
Method
Step 1 — Prep ingredients
Trim the Chinese broccoli and halve widthwise, then halve any thicker stems lengthwise. Trim the beans. Crush or finely chop the garlic. Thinly slice the spring onion on an angle. Pick the coriander leaves, discarding the stems.
Step 2 — Coat chicken
Whisk 1 egg in a bowl. Put 1 tbs flour in a shallow dish. Combine the breadcrumbs, coconut and Chinese barbecue seasoning in a separate shallow dish and season with salt and pepper. Cut the chicken into 6 pieces. Dust the chicken with the flour, shake off the excess, then dip in the egg and coat in the breadcrumb mixture.
Step 3 — Cook chicken
Heat 1cm oil in a medium frypan over medium heat. Cook the chicken for 2-3 mins each side until golden and cooked through. Drain on a wire rack over paper towel (this will keep the crumb crisp). Season with salt.
Step 4 — Stir-fry greens
While the chicken is cooking, heat 2 tsp oil in a medium deep frypan over high heat. Stir-fry the Chinese broccoli and beans for 2 mins or until starting to soften. Add the garlic and cook for 30 secs or until fragrant. Add 2 tbs water, 2 tsp soy sauce and a pinch of sugar and stir-fry for 2-3 mins until vegetables are tender. Taste, then season with salt.
Step 5 — Warm bao buns
Meanwhile, remove the bao buns from the bag and put on a plate. Cover with a microwave-safe bowl and microwave for 2 mins or until fluffy and heated through. (Alternatively, follow the steaming instructions on the packet.)
Step 6 — Make mayo and serve
Combine the sweet chilli sauce and mayonnaise in a bowl. Split the bao buns and spread with the sweet chilli mayo. Cut the chicken pieces in half. Fill the bao buns with the chicken, spring onion and coriander leaves. Divide the bao buns and garlic greens among plates to serve.
