Preheat the air fryer to 200C (see Don't have an air fryer?). Halve the carrot lengthwise, then thinly slice on an angle. Trim the pak choy and separate the leaves. Thinly slice the spring onion, keeping the white and green parts separate.
Step 2 — Air-fry dumplings
Spray or brush the dumplings with vegetable oil and put in the air-fryer basket, in batches if necessary. Air-fry the dumplings, turning halfway, for 8 mins or until golden and cooked through.
Step 3 — Stir-fry veggies
Meanwhile, heat 1 tbs vegetable oil in a medium deep frypan over high heat. Stir-fry the carrot, pak choy and 2 tsp soy sauce for 2-3 mins until tender but still with crunch. Remove the pan from the heat. Season with salt and pepper.
Step 4 — Make sweet chilli sauce
Put the sweet chilli sauce, white part of the spring onion, 2 tsp soy sauce and 1 tsp white vinegar in a bowl and stir to combine.
Step 5 — Serve up
Divide the dumplings and stir-fried veggies among plates and spoon over the sweet chilli sauce. Scatter with the sesame seeds and remaining spring onion and enjoy!
Step 6 — Don't have an air fryer?
If you don't have an air fryer, no problem! Pan-fry or steam your dumplings instead until they are tender.
